busy busy bees

We've been busy...

weekend-wrap up: our little skipper!

Besides starting to recover (very quickly) from his illness,
< like a CHAMP I might add!>
Caleb had a few interesting activities this weekend.

First, he got very used to his "breathing treatments"
<his nebulizer in Dr terms>
but that didn't mean he was happy about them.



Second, Daddy got the ski boat out of the barn and prepared it for it's first venture out onto the river on Saturday!

The one downfall... the battery was dead.
oh well...
After replacing the bum part, the whole family loaded up to head out for a short trip on the water!

Caleb continued to rest with the relaxing waves lulling him to sleep


But he did awake to let his mommy know he was ready to eat... NOW!


He didn't think much of his hat... or his sunglasses


but over all, he did well!


Daddy was very happy to have the little skipper on board!




Third,
Caleb continued his feud with "Mr. Sunshine"


He really has it in for this guy.

"Mr. Sunshine" is constantly smirking at the poor fellow...

Caleb can often feel his glaring eyes on the back of the poor baby's head
so Caleb turns around and screams at him for staring at him!

<I can already hear the arguments between him and our hypothetical younger children>


When Caleb finally gets his composure...
he bites the stew out of "Mr. Sunshine"!



"That'll teach him to stare at me!"



and Fourth,
 Bananas!






Meanwhile, I got into a few things myself.

First, we checked out our new house on the river!


haha...just kidding...this is actually a friend's parents' new home...
a little fabulous huh!?

Caleb can't wait to party it up at  Uncle Blake's house!

I decided not to be all creepy and take pics of the inside of their home...sorry!
but I did take a picture of their view...

Second,
I did a little cooking!

I made Italian Edamame for lunches this week...
can't remember which magazine this recipe came from but it's one of my faves!


I'll put the recipe on the end of this post if you're interested!

I also made my St. Patty's day cut-out cookies for our little bunko group this Tuesday night!
Rather than doing plain cut-out sugar cookies, I decided to try a new recipe from here...
Sugarbaker's Chocolate Mini-Chip Cookies from this cookbook!

Looks tasty huh?!
I'm thinking about green beer too...I wonder if any of those girls drink beer?

Third,
We began planning for our vegetable garden!

Also, I planted some herb seeds

Most of my plants are faring pretty well...


so far all three blueberries are intact...
(the Hubbs ran over this guy's original buddy with the lawn mower last year...he was in trouble!)


The curly willow I have been attempting to grow from cuttings of my Momma's tree for the past half decade decided that it didn't bite the dust last year after all!
<although it is significantly smaller than it began!>




Two of my five "George Tabor" azaleas kicked the bucket- two that I bought!
(the others are babies from my Momma's plant)

There are some things I don't kill though!
Day lillies, rosemary, onion chives, garlic chives, honey-suckle, and irises!

<I won't even get into houseplants...that's a morbid topic for me>

and of course mint...can't kill it with round-up!
<ok, so you probably could actually...I'll ask the dead azaleas...they know from experience>
here is the chocolate mint sprouting up everywhere...it was only about the size of a salad plate last year...

I think we may be in trouble- my Momma warned me!

This rose bush has turned out amazing!

It grew from about 1'x1' to this size in only two seasons!
I'll have to get pictures once it starts blooming-it is so pretty!




The Hubbs had a big weekend as well...
besides the boat, he had another first for the year...
mowing...
and mowing...
and mowing...


He's also been busy with the mulch...it's a LOT of fun.

Unfortunately, our weekend ended on a somewhat crumby note... starter went out on the truck

Here's that recipe:

Italian Edamame 
serves 4
prep time: 20 min
total time: 55 min
Ingredients:
2 medium zucchini (about 1 lb total), ends trimmed
1 tsp olive oil
2 cloves garlic, minced
1 3/4 C chopped onion
1 3/4 C diced red bell pepper
16 oz edamame, shelled
2 C canned diced tomatoes with Italian herbs
3/4 C orange juice
1/2 C chopped fresh basil
2 C cooked long-grain brown rice  (can be replaced with any small whole-wheat pasta such as rotini or orzo)
garnish with fresh basil and orange slices

>Slice zucchini in half lengthwise; cut acrss to make 1/4-inch slices.   Set aside.
>Heat olive oil in a large saute pan or wok over med-low heat. Add garlic and saute for 1 minute.
>Add onion to pan.  Cook 2 minutes or until pieces begin to soften.  Add bell pepper, zucchini, and edamame; stir and cook for 2 minutes.
>Strain tomatoes, reserving juice (about 1 C).  Combine solid tomato chunks with vegetable mixture and stir.
>Whisk together reserved tomato and orange juice, pour over vegetables.  Turn heat to low and simmer 15 to 20 minutes.  Add basil and toss together.
>Spoon 1/2 C rice on each plate.  Top with 1 1/2 C edamame mixture.  Garnish if desired.
